OK, I will be completely honest, I am not an excellent cook. I am a good one. But I am an excellent baker. I take it extremely seriously and have been baking for a very long time. Like any baker, novice or highly skilled, I take pride in what I bake and how it is done. And sometimes there is frustration with a mixer and you just forgo it and attack it with good old arm strength to get the last bit of work into something, like a dough. So when this stand mixer arrived I wondered would it stand up to my KitchenAid 600 or would I be left doing more work than I normally would. Thankfully, I can answer that the Brevile 5 quart mixer handles extremely well!I made two things to test it out: mashed potatoes and cheesecake, don't judge me, that covers most of the food groups. The flat beater handled the potatoes fine. And the added bonus was that the Breville didn't shift across the table on a higher setting, there was a slight vibration. I have been using a Kitchen Aid Mixer for several years. I have a few attachments and it works great. I was excited to be given the opportunity to use the Breville 5-quart mixer, because I wanted to see if it had added features that would make baking easier.There are 5 main product features that Breville says make this mixer stand out from the rest: 1. Planetary Mixing Action - the way the mixer moves the paddle does scrape the bowl more thoroughly than the Kitchen Aid. I found that I didn't really need to scrape the sides at all during mixing. 2. Load Sensing Technology with Motor Protection - a wonderful feature! So far I have used it to make 2 loaves of bread, a batch of cupcakes, Swiss meringue buttercream frosting, and some espresso meringues. I had never made bread before, but the mixer made it much easier and less frightening than I was expecting. Even though I frakked up the recipe on the first load (accidentally leaving out the milk!), the bread still came out quite fluffy and well mixed. The cupcakes were perfect, fluffier than they'd ever been when I've mixed them by hand or with my hand-held mixer. The frosting was also perfect - this recipe usually takes me 15-20 minutes when using my hand mixer, but the Breville cut it down to about 4:30. My mind was blown.
